Wild Turkey Roll Ups Stuffed with Dates and Goat Cheese

Course Appetizer
Cuisine American
Servings 25 rolls

Ingredients

  • ½ pound wild turkey breast
  • 4 ounces local goat cheese softened
  • 3 tablespoons heavy cream
  • 9 large dates
  • kosher salt
  • Freshly cracked black pepper

Instructions

  • On a cutting board, slice the wild turkey breast into 1-inch strips across the grain. Then pound the strips to about 1/4-inch thickness to tenderize. Cut into pieces about 4 inches long. Salt and pepper both sides.
  • Place the turkey in a smoking hot cast iron skillet, brown for about 1 minute, and then turn and cook for about 2 more minutes or until cooked through. (Meat temperature should be 160 degrees.) Remove and allow to rest for about 5 minutes.
  • In a medium bowl, beat the goat cheese until creamy. Stir in heavy cream until mixture is smooth.
  • Slit each date lengthwise and remove the pit. Fill each date with goat cheese mixture. Wrap a turkey slice around the date and secure with a toothpick.
  • Sprinkle with additional salt and pepper before serving.
